Creamy Tomato Basil Chicken Recipe

This family dinner is an absolute favorite of mine! The creamy tomato makes it a finger sucking dish plus throw the aroma of the basil and my gosh… To die for!! The tomato basil chicken recipe is easy to prepare and a hit at home with the family.

My Tomato Basil Chicken Recipe takes little time to prepare and very few ingredients which both qualities are important for me. The one thing you need to stick with is, quality ingredients.

One thing I must admit is that I like recipes with ingredients that are readily available in my kitchen at any time. Besides the fresh basil, this is one that achieves that. With a total of 7 ingredients that includes salt and pepper, you could see that it’s pretty simple. The Tomato basil chicken recipe is so simple that you will end up making it again and again due to its easy and exotic flavors.

The best side to pair this recipe is rice.

Tomato Basil Chicken Ingredients

1/2 can of 6 oz tomato paste or half can of tomato sauce

4 On the vine tomatoes

1 whole chicken cut in parts

4 cloves of garlic minced

3 tablespoon of olive oil

Salt and Pepper to taste

Fresh Basil

1/4 cup of chicken broth

Instructions

  • Heat olive oil to skillet.
  • Season chicken with salt and pepper. Sear both sides for about 7 minutes on medium. high heat. I like to get the crusty feeling on the chicken.
  • Take the chicken out of pan and into a plate.
  • Add garlic and tomatoes to pan until you can smell the aroma from garlic and tomatoes are cooked, about 3 min.
  • Mix the tomato paste with a cup of water and add to pot. Add the chicken broth.
  • Add the basil to pot. Let the sauce simmer for about 15 min.
  • Add the chicken back to the pot. Serve with rice or couscous.
